Rainbow Buttercream Cookies:

Ingredients:

For the cookies:

• 2 cups all-purpose flour
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt
• 1/2 cup unsalted butter, softened
• 3/4 cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract

For the rainbow buttercream:

• 1/2 cup unsalted butter, softened
• 2 cups powdered sugar
• 1-2 tablespoons milk
• 1/2 teaspoon vanilla extract
• Gel food coloring (assorted colors)

Instructions:

1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. In a large bowl, cream together the softened butter and sugar until light and fluffy, using a hand mixer or stand mixer.
4. Beat in the egg and vanilla extract until well combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
6. Divide the dough into equal portions. Roll each portion into a log shape, about 1 inch in diameter. Wrap each log in plastic wrap and refrigerate for at least 1 hour, or until firm.
7. Once chilled, slice the logs into 1/4-inch thick rounds. Place the rounds onto the prepared baking sheets, spacing them about 2 inches apart.
8. Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Remove from the oven and let cool completely on the baking sheets.
9. While the cookies are cooling, prepare the rainbow buttercream. In a large bowl, beat the softened butter until smooth. Gradually add the powdered sugar, milk, and vanilla extract, mixing until smooth and creamy.
10. Divide the buttercream into separate bowls and add a few drops of gel food coloring to each bowl, creating different colors of frosting.
11. Once the cookies are cooled, spread or pipe the colored buttercream onto the cookies, creating a rainbow pattern.
12. Allow the buttercream to set before serving.
